Salted Caramel Sauce

We love super easy recipes that you can whip up at the last minute for unexpected dinners with friends or items for the fridge that can quickly rescue you when you need a last minute dash of something delicious. 
This Salted Caramel Sauce is one of those easy peasy but super delicious time savers, although once you have tried it you will understand why there is often not much left for the jar in the fridge. Actually you may want to just find yourself a straw and a quiet place where you don't have to share (joking), it's SO delicious.
I promise once you've made this once it will become a regular go-to-dessert in your house too....all you need is some vanilla ice-cream to drizzle it over!

 

SALTED CARAMEL SAUCE

- 1 cup brown sugar

- 4 T butter

- 1tsp vanilla extract

- half a cup of cream

- pinch of Malden salt/sea salt

Place all your ingredients in a saucepan, except the salt and heat over a medium heat until it comes to a gentle boil. Allow it to boil gently for about 3 minutes (watch it doesn't overflow the saucepan). Switch off the heat and allow to cool for a few minutes and then add a pinch of sea salt (to your taste). Give it a stir and pour into a warm glass jar. Warm glass in the oven or microwave as it must not be cold when you pour in the hot liquid. 

Serve the sauce over vanilla ice-cream for an easy-peasy delicious dessert. Add strawberries for a little extra. Once cooled you can store in the fridge for a week or so. It does thicken in the fridge so just warm the sauce up again to use it... that is if you have and left!
